Armenian cucumber recipes
Ingredients
.2 cucumbers,sliced
.1 red onion,sliced
.2 tablespoons vinegar or lemon juice
.2 tablespoons sour cream
.salt and pepper,to taste
.1/2 teaspoon sugar
.1 teaspoon chopped fresh dill
Directions- Armenian cucumber Salad
.Mix onions & cucumbers together.
.Mix rest of ingredients together in a bowl and give a shake.
.Add to cucumbers, chill till very cold & serve.
Ingredients- Cucumber Soup
One large cucumber, peeled and finely chopped, with seeds and pulpy
center removed.
8 oz. cup of plain yogurt.
¼ cup of chopped fresh mint
½ cup of chopped walnuts.
Ice cold water to thin the yogurt
Note: If you use an Armenian Cucumber, or other thin-skinned variety, you need not remove the skin or center – as there are few seeds.
.Take the yogurt and thin with cold water to form a soupy consistency
(not too thin or too thick).
Add the finely chopped cucumber, the mint and the chopped walnuts.
Mix together thoroughly, adding more water, if necessary to get the desired consistency.
Cover bowl and chill thoroughly for at least 6 hours (overnight is preferable) to allow the flavors to really meld together.
Pour into bowls, garnish with mint, and serve cold.
