• 10 x strips of mouli 2cm x 10cm
• 10 x strips of carrot 2cm x 10cm
• 10 x strips of cucumber 2cmx 10cm
• 1 small punnet Enoki mushrooms
• 1 small punnet Shiso leaf
For the pickling:
• 150ml while wine vinegar
• 50g caster sugar
• 10g ginger
• 1 chilli split
• Coriander seeds
• Star anise
1. Mix the pickling ingredients and pickle the mouli and carrot in
the solution for at least 3 hours.
2. Lay the cucumber strips flat the layer the carrot on top followed
by the mouli, the enoki mushroom and in the centre the shizo leaf.
3. Roll the strip together and push a skewer through to hold in place.
