How to cook Warm Potato Salad Recipe
Quick potato recipe Ingredients:
Yukon gold potatoes – 4 to 5 potatoes cut into 1 inch pieces
(steam potatoes until tender – 7 to 10 minutes)
* cottage cheese – 1/2 cup
green beans – 1 1/2 cups cut into 1/2 inch pieces
(add beans to potatoes a few minutes before they are finished cooking)
pine nuts – 1 tbsp
fresh chives – 1 tbsp finely minced
Quick Tip: for a quicker way to cut up chives, use scissors and just cut them to desired length right into the salad bowl. It’s much faster and easier than using a knife.
lemon pepper – to taste
* Quick Tip to Lower Fat: use a low-fat or nonfat cottage cheese
1. Start by steaming the potatoes.
2. While potatoes are cooking prepare other ingredients and add to a mixing bowl, except for the green beans.
3. When potatoes have a few minutes left to steam, add the green beans on top.
4. When potatoes and beans are finished cooking add to the other ingredients in the mixing bowl, sprinkle on the lemon pepper to taste and mix well.
Note: Serve potato salad immediately or keep covered and warm until
ready to serve
