Fried Rice with Bok Choy by dianncy
INGREDIENTS
• 3 cups Cooked, cold rice (day-old is best)
• 1 tablespoon of brown sugar
• ½ teaspoon of molasses
• 1 tablespoon of light soy sauce, (I use 2 tablespoons, I add the
2nd little bit at a time then taste and continue until it tastes the
way I want it to)
• 2 tablespoons of Sesame oil
• 1 can Sliced water chestnuts
• ½ bunch of green onions dices, and or white onion (quarter) diced
• ½ red or yellow (never green) bell pepper diced
• Cooked chicken or pork (optional)
• 1 bok choy, shredded
INSTRUCTIONS for cooking Fried bok choy recipe
1. Pour sesame oil in wok or frying pan, turn on medium high: sauté
red bell pepper and white onion until brown and or translucent.
2. Add rice and soy sauce. Mix and (sort of) stir fry. Add brown sugar
and or molasses’s. Mix thoroughly.
3. Add chopped cooked meat (optional) and water chestnuts during last
few minutes of heating. Add bok choy last, make one last mix and remove
from heat. Don’t want bok choy to go limp.
When done and removed from stovetop, add green onions. Serve.
4. Fried rice uses leftover rice, of course, but also makes great
use of any leftover vegetables or meats. Try adding snow peas or bean
sprouts for a really fresh flavor.
