• 1 (18.5 ounce) package carrot cake mix
• 1 egg
• 1/2 cup applesauce
• 1/4 cup vegetable oil
• 1 1/2 cups shredded zucchini
• 1/2 cup raisins
• 1/2 cup chopped pecans
1. In a mixing bowl, combine the cake mix, egg, applesauce and oil;
mix well. stir in the zucchini, raisins and pecans. Fill greased or
paper-lined muffin cups three-fourths full. Bake at 350 degrees F
for 25-30 minutes or until muffins test done.
