Corn Pie with Cheese Cooking method
Corn pie recipe Ingredients:
• 1 cup sifted all-purpose flour
• 1/2 teaspoon salt
• 6 tablespoon shortening, chilled
• 2 tablespoons very cold water

• 3 eggs
• 1/3 cup cream or half-and-half
• 1 teaspoon salt
• 1/8 teaspoon pepper
• 1 tablespoon grated onion
• 2 cups cooked whole kernel corn
• 1 cup grated sharp Cheddar cheese
• 6 strips bacon, partially cooked
For pastry, sift flour and salt together into a bowl. Cut in half
of the shortening until mixture resembles meal, then cut in remaining
shortening until particles are the size of peas. Add water, mixing
lightly with a fork just until moist. Shape into a ball. Roll out
on lightly floured surface. Place in a 9-inch pie plate; flute edge.
For filling, combine the eggs, cream, salt, and pepper; beat until
smooth. Add onion, corn and cheese; pour into pastry. Place bacon
over the top, arranging in spoke-like fashion. Bake at 400° for 25
to 30 minutes.
