Tofu eggplant recipe Ingredients

Onions, raw, 2 large (remove)
Eggplant, 4 cup (1" cubes) (remove)
Mori-Nu, Tofu, silken, lite firm, 5 slice (remove)
thai kitchen lite coconut milk, 3.5 cup (remove)
Lentils, 2 cup (remove)
Water, tap, 4 cup (8 fl oz) (remove)
Curry powder, 3 tbsp (remove)
Hot chile pepers, 1 pepper (remove)

Directions for cooking Eggplant Tofu Lentil Curry

onions first. then garlic & ginger. then spices & pepper. then liquids & lentils. Simmer for 5 minutes. add tofu & eggplant. Simmer until vegetables & lentils are tender, 15 minutes or more. It tastes better the next day!
