Cooked kale recipes –For breakfast
Take some ground beef and chopped onion, fry it up - crumbling it
up as you go - until no longer pink. Drain. Beat up some eggs (for
hubby and I, I use 8 oz ground beef, 6 eggs with 4 yolks removed).
Shred your kale and add it to the pan before you add your eggs. Cook
it until it just starts to wilt - then add your eggs by moving everything
over in your skillet and adding the eggs to the empty side. Once they
start to set, stir them into the mixture and just before the eggs
are no longer runny, add some Guryere cheese and stir that in. Just
before serving, sprinkle with shredded Parmesan cheese.
I had this for the first time in the Warwick Hotel in downtown Seattle and have been making it for hubby ever since.
Olive Garden restaurant adds kale to their potato soup and it's very
good.
