Fresh kale recipes Ingredients
Kale is my absolute favorite green veggie.
Strip the leaves off the tough stems. Toss the stems.
Rinse the Kale leaves. Sometimes they are sandy. Give them a good
shake to loose any excess water.
Put about two tablespoons of bacon grease, or butter in the bottom
of your pan.
Toss in the Kale, stir to coat with the bacon fat or butter.
Add a little water or broth (1/4 cup) and cook on low until the kale
it tender. This takes from 5 to 8 minutes depending on your on how
tender you like it.
You can saute some onion in the pan and then add the Kale.
I sometimes throw in crumbled cooked bacon.
Kale is fine in soup and casseroles.
You can add small pieces to salads. But be careful. Raw kale does have a bit of a "bite" to it. I wouldn't use kale and spinach in the same salad.
You can wilt kale leaves and use them in place of cabbage to make
Kale (instead of cabbage) rolls.
