Layered Kale Casserole
1 1/2 cups cooked brown rice
1 cup shredded low-fat cheese
1/4 cup minced green onion
1/4 cup minced celery leaves
1 teaspoon Worcestershire sauce
1/4 cup low-fat milk
1/4 teaspoon thyme
1/4 teaspoon ground sage
1/4 teaspoon rosemary
salt & pepper to taste
2 cups cooked chopped kale

Method of cooking Kale casserole recipe


Preheat oven to 375 degrees. Oil a 1 1/2-quart covered casserole dish. Mix all ingredients except kale in a bowl. Place half the kale in prepared casserole dish and spread rice mixture over evenly. Cover with remaining kale. Cover and bake 15-20 minutes, until cheese is melted and bubbling. Makes 4-6 servings.
