Here are two ways to cook Kale
1. cover a ham hock in water and boil for 30 minutes. Add Kale leaves
and enough water to cover Kale along with salt and pepper. Bring to
a boil and turn down the heat to low and cook until leaves are tender.
Remove kale leaves and drain and chop. Take ham hock and remove fat
and scrape off the meat and chop. Mix the meat (it won't be a whole
lot) into the Kale. Drizzle some of the stock over the mixture and
serve.
2. Boil kale leaves in chicken broth seasoned with salt, pepper until
leaves are tender - drain chop and drizzle some of the stock on the
kale and serve.
BTW - this works with collard, spinach, cress, turnip greens, mustard
greens and even cabbage
