How to prepare Lentil and Nut Loaf Recipe

INGREDIENTS
• 8oz green lentils.
• 1 onion finely sliced.
• 1 carrot finely sliced.
• 14oz can of tomatoes.
• 7 fluid oz vegetable stock.
• 4 oz fresh bread crumbs.
• 4 oz chopped nuts.
• 2 eggs.
• 1 tsp of mild curry powder.
• Half tsp of cumin seeds.

Method of cooking Lentil and Nut Loaf Recipe


1. Wash lentils, drain and place in a pan with onion, carrot, tomatoes with juice and stock.
2. Bring to the boil, cover and simmer for 30 mins or until lentils are soft. Add more liquid if dry, cool slightly.
3. Heat the over to 180 C or 350 F
4. Stir in the bread crumbs then the remaining ingredients. Mix well and spoon into a greased 2lb loaf tin and cook for 1 hour, in medium oven.
