Good old Scottish lentil soup .
2 Onions (medium to large) chopped finely
2 large carrots diced.
Ham stock, either fresh or two cubes.
Good sized mug full of lentils
In a good sized knob of butter, par fry the onions and carrots gently,
until onions go clear. Add the lentils and also fry them slowly for
a short time. Keep a lid on the pan to seal the juices. Either add
Ham stock or dissolve two stock cubes in boiled water and stir in.
Add tarragon, a good amount of black pepper. Top up with boiled water
and bring up to the boil. Turn down to simmer and stir occasionally
to avoid sticking. Add a little more water if it thickens too much.
Cook on a really low heat for about 2 hours keeping your eye on water
level and adding more if needed. It's delicious
