Recipe for vegetarian lentil :Red lentil patties (vospov kufteh)
1 cup red lentils, picked clean of debris and rinsed
3 cups water
1/2 cup fine-grain bulur
1 teaspoon salt
1 and 1/2 teaspoon ground cumin
2 medium onions, finely chopped and divided
1/2 teaspoon cayenne
1 tablespoon olive oil
1 small bunch fresh flat-leaf parsley, chopped
1. place the lentils and water in a saucepan. cover and bring to
a boil. lower heat and simmer, still covered, 10 to 15 minutes, until
the lentils are tender. red lentils cook quickly!
2. add the bulgur, salt, and cumin. stir well and turn off the heat.
3. in a skillet, saute half the onion with the cayenne in the olive
oil until the onion is translucent, about 10 minutes.
4. combine onion with the lentil mixture. let stand, uncovered, until
cool, about 30 minutes.
5. shape lentil mixture into egg-sized pieces or patties and arrange
on a serving tray. pile patties high with parsley and the remaining
onion.
6. serve at room temperature or chilled with a tossed green salad
and pita or armenian cracker bread.
