1. (frenchish) roasted beets, sliced onion, mandarin orange segments, bleu cheese with balsamic vinagrette (balsamic vinegar, honey, mustard, salt and pepper, olive oil)

2. (greek) feta cheese, chunks of tomato/cucumber/green pepper and parsley with lemon juice, oregano and olive oil

3. (kinda indian) chick peas or other beans, cucumber, carrot, celery, peppers and balsamic vinagrette with cumin

4. (asian) scallion, jullianne (super thin sticks) of carrot, celery, cucumber, onion, snap peas, bean sprouts in a vinagrette of honey, sesame oil, rice vinegar, soy sauce and vegetable oil.

5. (perfect light cole slawish) shredded cabbage with carrot and onion with a honey, mustard and rice vinegar dressing.

6. (mexican) big chunks of avocado, tomato, onion, cilantro, and iceberg lettuce with lime juice, olive oil, salt and pepper

i highly recommend making a few medium size batches of dressings to have for a few days at a time or buying a few healthy favorites to have on hand.

investing in good interesting pantry ingredients like spices, dressings, oils, vinegars, etc makes it so much easier to make it interesting.

and cubes of cheese, canned artichoke hearts, sundried tomtoes, roasted peppers, canned beans, canned fruit, etc are great things to add to simple salads - and you can keep them for much longer than fresh produce.
