Yield: 4 servings
Vegetable oil 1/4 cup
Chicken breast, shredded 2 lb.
Hearts of palm, sliced 1/3 cup
Roasted sweet bell peppers, julienned 1/4 cup
Scallions, sliced 1/4 cup
Soy sauce 1/2 cup
Sesame oil 1 Tbsp. plus 1 tsp.
Fresh cilantro, chopped 2 1/2 Tbsp.
Iceberg lettuce head, cored, quartered 1
Pickled sushi-style ginger, sliced 1 Tbsp.
Spanish olives 1/4 cup
Lime wedges 4
Spanish seasoning blend (purchased or your recipe) 1/4 cup

Method of cooking Shredded lettuce recipe

1. Heat vegetable oil in large sauté pan over high heat. Add chicken; sauté until cooked through, about 2 minutes.
2. Add hearts of palm, peppers, scallions, soy sauce and sesame oil; cook until liquid is reduced, about 1 minute. Add cilantro and remove from heat.
3. Place lettuce quarter on one side of serving plate and place chicken filling next to lettuce. Top filling with ginger; garnish with olives and lime wedges. Dust plate with Spanish seasoning blend and serve immediately.
