Pure and Simple Pumpkin Bread Recipe Cooking method
Makes 2 loaves
• 1/2 cup (1 stick) organic unsalted butter
• 1 1/3 cups organic sugar
• 4 large organic or local free-range eggs
• 1 teaspoon pure vanilla extract
• 2 cups organic canned pumpkin, or cooked fresh organic pumpkin (try
our tips for cooking a pie pumpkin)
• 1 teaspoon ground cinnamon
• 1 1/2 teaspoons freshly grated nutmeg
• 3 1/2 cups all-purpose organic flour
• 2 teaspoons baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 2/3 cup water
• 1 cup toasted and chopped pecans or mini chocolate chips (optional)
1. Lightly grease and flour the insides of two, 9 x 3-inch loaf pans
or one, 9 x 13-inch pan or baking dish. Preheat the oven to 350 degrees.
2. Cream the butter, sugar, eggs and vanilla in the bowl of an electric
mixer until smooth. Beat the pumpkin in until well blended.
3. In another bowl, stir together the cinnamon, nutmeg, flour, soda,
baking powder and salt. Add the dry ingredients alternately with the
water in three parts, beginning and ending with dry ingredients. Fold
in the nuts or chocolate chips if you desire.
4. Transfer the batter to prepared pan or pans. Bake 40 (9 x 13) to
55 minutes (loaf pans), or until a toothpick inserted in the center
of the bread comes out clean. Cool 10 minutes before turning the loaves
onto racks to cool completely (if in cake pan no need to turn it out).
