Baked spaghetti squash recipes Ingredients

1 spaghetti squash, halved lengthwise
16 ounces turkey sausage, casings removed
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 large can tomatoes
1 cup low fat cottage cheese
1/2 cup part-skim mozzarella cheese
1/4 cup chopped parsley
1/4 cup grated parmesan cheese

Directions for cooking Baked spaghetti squash recipes

Preheat oven to 400F.

Coat a baking sheet with cooking spray. Place the squash, cut side down, on the sheet. Bake for 30 minutes or until tender when pierced with a sharp knife. Allow to cool slightly. With a fork, scrape out the squash strands. Drain squash in a collander.

Meanwhile, add cooking spray and saute sausage until browned. Remove sausage to plate with paper towel and drain grease from pan. Turn heat to medium-low and add olive oil. Add garlic and saute briefly, until fragrant. Add tomatoes and Italian seasoning. Cook on medium 10-15 minutes, or until thickened to desired consistency.

In a large bowl, combine squash, cottage cheese, mozzarella, parsley, sausage, and tomato sauce. Season with salt and pepper. Stir well to mix all ingredients.

Spray a 9x13 baking dish with cooking spray. Pour mixture into prepared dish; sprinkle with the Parmesan cheese.

Bake for 30 minutes or until bubbly and heated through.
