Summer Squash Pie Cooking method


Summer squash pie recipe Ingredients:
• 5 medium summer squash, yellow or zucchini, sliced
• 1/4 cup melted butter or margarine
• 3/4 cup sugar
• 1 tablespoon lemon extract
• 1 tablespoon all-purpose flour
• 2 egg yolks, beaten
• dash salt
• 1 pie crust, baked (9-inch)

Preparation of Summer Squash Pie:


Cook squash in boiling water until tender; drain well and mash. Combine butter, sugar, lemon extract, flour, eggs and salt. Add squash; stir well.
Spoon squash mixture into baked pie crust and bake at 375° for 20 to 25 minutes, or until firm.
