Sweet green pepper jelly recipe Cooking method
Tastes rather like guava jelly. 1/4 c. seeded and chopped red pepper
6 c. sugar 1 1/2 c. cider vinegar 1 bottle liquid pectin 1/2 to 1
tsp. green food coloring
To best retain juice when chopped peppers, use blender at "chop"
speed. Or chop finely in bowl. Bring all ingredients except food coloring
and pectin to a boil and boil for 10 minutes. Add the pectin and bring
back to boil. Boil hard for 2 minutes, then remove from heat, skim,
and cool. When tepid, stir in the coloring, pour and seal. Makes 4
glasses.
