How to cook prepare Sweetcorn and lime chutney recipe
Serves 4
Sweetcorn chutney recipe Ingredients
• 2 tbsp olive oil
• 1 large shallot, diced
• 1 red pepper, deseeded and finely diced
• ½ tsp coriander seeds
• ½ tsp garam masala
• 1 sprig thyme
• 10g brown sugar
• 20ml white wine vinegar
• 100g sweetcorn
• finely grated zest 2 limes
• 10g chopped fresh coriander
1. Heat the oil in a saucepan and fry the shallot and pepper gently
for 5 minutes until beginning to soften. Add the spices and thyme
and cook slowly for 10-15 minutes, stirring occasionally.
2. Once the pepper is soft, add the brown sugar, vinegar, sweetcorn,
lime zest and coriander. Cook for a further 4 minutes then remove
from the heat and set aside to cool. Serve with Stuart's chicken and
smoked garlic confit.
