Sweetcorn Fritters
Ingredients
• 2 eggs
• 4 tablespoons milk
• 90 g self raising flour
• 1/2 teaspoon salt
• 275 g sweetcorn, drained
• vegetable oil (for frying)
1. Mix together all the ingredients except the sweetcorn and oil until
a smooth batter is brought about. Stir in the sweetcorn.
2. Heat a bit of vegetable oil (tablespoon or two) in a frying pan
and drop in tbsp sized balls of the mixture and fry for 3-4 minutes
on either side until golden. Serve with a yoghurt dip such a raita.
