MEXICAN RICE

1/2 cup chopped green or red peppers
1 to 2 cloves garlic minced
1 tablespoon oil
3/4 cup long grain rice, uncooked
1 (14 1/2 ounce) can diced tomatoes with garlic and onion, undrained
2 tablespoons chopped green chiles
1 teaspoon sugar
i teaspoon chili powder
1/8 teaspoon pepper
dash or more of Tabasco (according to taste)
1 1/4 cups water

Method of cooking Diced tomato recipes

In medium saucepan cook green pepper and garlic in oil, until softened.

Stir in the rest of the ingredients. Bring to a boil, then reduce heat. Cover and simmer 15 -20 minutes, until rice is tender and most of the liquid is absorbed.
