How to cook Stuffed 8 Ball Zucchini
Ball zucchini recipes Ingredients
2 medium sized ball zucchini
olive oil
1 lb. ground sirloin
1/2 cup minced onion
black pepper, to taste
1/2 cup chopped peeled tomatoes
1 clove garlic, minced
1 tablespoon chopped basil
1 teaspoon chopped thyme
1 tablespoon chopped flat-leaf parsley
1/4 cup bread crumbs, divided
3 tablespoons grated Parmesan cheese
Cut top off of zucchini balls and hallow out seeds and pulp. In skillet,
brown sirloin. Add onion, pepper, tomatoes, garlic, and herbs. Cook
until onions are soft. Add bread crumbs and stir to combine (will
absorb into meat mixture). Take off of burner and allow to cool slightly.
Meanwhile, lightly rub outside of zucchini's with a very small amount
of olive oil. Fill zucchini's with meat mixture. Top each with 1 tablespoon
of bread crumbs and 1 tablespoon Parmesan cheese. Bake at 350F for
about 20-25 minutes. Sprinkle reamining 1 tablespoon of Parmesan cheese
on top of remaining filling and serve with cooked, stuffed zucchinis.
Make 2 LARGE servings
Or would be plenty of filling for 4 zucchini balls or several halved
regular zucchinis.
Also, to lower calories, etc., would be fine with half the amount
of ground meat. Would also be good with ground pork, turkey, or chicken.
