How to cook Beef-Stuffed Zucchini
Microwave zucchini recipe Ingredients:
• 1 medium zucchini
• 1/4 lb. lean ground beef
• 1 tbsp chopped onion
• 1 tbsp minced green pepper
• 3 tablespoons tomato sauce
• 2 tbsp Parmesan cheese, divided
• Dash of garlic powder
• Dash of salt
Wash and cut zucchini in half lengthwise. Scoop out pulp, leaving
about 1/4-inch shell. Chop pulp and set aside. Place ground beef,
onion, and green pepper in small casserole dish. Cover and microwave
on HIGH for 1 to 2 minutes, stirring once, until browned. Drain. Add
zucchini pulp, tomato sauce, 1 tablespoon Parmesan, garlic powder
and salt to beef mixture. Place half of mixture in each zucchini shell;
sprinkle top of mixture with remaining 1 tablespoon Parmesan cheese.
Place on a microwave roasting rack; cover tightly with heavy-duty
plastic wrap. Microwave on HIGH for 1 1/2 minutes. Give dish a half-turn,
and microwave on HIGH for 1 1/2 to 3 1/2 minutes or until filling
is set and zucchini is fork-tender. Serve immediately.
