Zucchini ribbons recipe Ingredients
2 zucchini green squash
3/4 cup salad shrimp, cooked, chopped fine
1/2 cup red bell pepper, diced fine
2 tablespoons fresh parsley, chopped fine
1/4 cup chives, snipped
2 tablespoons Dijon mustard
1/4 cup parmesan cheese, grated fine
2 tablespoons mayonnaise
8 drops Tabasco sauce
1 teaspoon fresh lemon juice
pinch sugar
Salt and pepper, to taste
red bell pepper diamonds, garnish (optional)
fresh rosemary sprigs, garnish (optional)

Method of cooking Zucchini Ribbon Rollups Appetizer

Trim zucchini ends; slice lengthwise into long thin ribbons; discard first and last slices.

In a medium bowl combine shrimp, red bell pepper, parsley, chives, Dijon mustard, grated cheese, mayonnaise, Tabasco sauce, lemon juice, sugar, salt and pepper.

Place 2 teaspoons shrimp filling at one end of a zucchini ribbon slice, rollup lengthwise. Place seam side down on a serving platter and serve.

Yield: Makes approximately 24 zucchini ribbon rollups
